- Wearing gloves, remove entrails from chicken
- Thoroughly rinse both inside and ouside of chicken until liquid runs clear
- Thoroughly dry inside and outside of chicken with paper towels, being careful to thoroughly dry under legs and wings.
- Rub the 1/2 cup of spices all over the chicken, inside and out. Any mixture of sweet smelling spices will do. (this is to mask the odor of the decay).
- Rub salt over entire chcken, making sure that every inch is covered (and very dry).
- Fill the cavity with salt.
