Cleaning and Salting:

  1. Wearing gloves, remove entrails from chicken
  2. Thoroughly rinse both inside and ouside of chicken until liquid runs clear
  3. Thoroughly dry inside and outside of chicken with paper towels, being careful to thoroughly dry under legs and wings.
  4. Rub the 1/2 cup of spices all over the chicken, inside and out. Any mixture of sweet smelling spices will do. (this is to mask the odor of the decay).
  5. Rub salt over entire chcken, making sure that every inch is covered (and very dry).
  6. Fill the cavity with salt.
