Tennessee Eggs

Try this egg recipe.

Cook Time: 35 minutes

Ingredients:

  • 6 boiled eggs
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 2 cups heavy cream
  • salt and pepper to taste
  • ground cayenne pepper to taste
  • 1/4 cup dry bread crumbs

Preparation:

Preheat oven to 350 degrees. Spray 1-1/2 quart casserole dish with Pam. Peel boiled eggs and separate yolks from whites. Chop egg yolks and egg whites separately.

In medium saucepan, melt butter. Stir in flour, then gradually blend in cream. Stir constantly until thickened. Add seasonings to taste. Mix in egg whites and pour into casserole dish. Top with a layer of bread crumbs. Sprinkle on chopped yolks, then the remaining bread crumbs. Bake for 35 minutes.
