The Corn Muffin is Massachusetts State Muffin.
Prep Time: 10 minutes
Cook Time: 20 minutes
Ingredients:
- 1/4 cup oil or melted butter
- 1 cup cornmeal
- 1 cup flour
- 2-4 Tbsp sugar (optional)
- 4 tsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 1 egg (beaten)
Preparation:
Combine cornmeal, flour, sugar, baking powder and salt. Add oil or melted butter, milk, and egg. Mix until just blended. Place in a greased muffin tin.
Bake at 400 degrees for 18-20 minutes or until golden brown on top.
