Iowa Corn Casserole

Over 55% of Iowa's corn goes to foreign markets - the rest is used in other parts of the United States.

Ingredients:

  • 1pound bacon, diced
  • 2 cups bread crumbs
  • 1/4 cup minced onions
  • 1/2 cup chopped green pepper
  • 2 cans cream style corn (16.5 oz. each)

Preparation:

Preheat oven to 350 degrees. Put diced bacon in skillet and fry until light brown. Remove bacon from skillet and set aside. Drain drippings from pan, reserving 2 tablespoons. Add onion and green pepper to drippings and saute until tender. Mix in corn and bacon. Place mixture into casserole dish. Sprinkle bread crumbs on casserole and bake for 25 minutes.
